| 1 pound potatoes, peeled and shredded |
| Place potatoes in a colander & drain for 15 minutes. Then rinse under cold water and gently |
| squeeze in paper towels to remove as much water as possible. Lightly whisk eggs in large |
| bowl,stir in potatoes, onion, flour, and baking powder. Season with salt and pepper. Coat large |
| non-stick pan with generous amount of PAM. Drop batter into pan by the tablespoon and flatten to |
| about 3" circle. Cook 2-4 minutes per side depending on your stove--will be lightly browned. |
| I usually top with fat-free sour cream or unsweetened applesauce and add the appropriate points. |

| If you don't mind a 2 point latke, add 1 tbs. olive oil to the pan before frying the latkes. Of course, |
| they come out much crisper that way. Enjoy. |
