Potato Latkes

Ingredients



1 pound potatoes, peeled and shredded

2 eggs

1 onion, grated

2 tbs. unbleached flour

1/2 tsp. baking powder

Salt and pepper to taste



Instructions



Place potatoes in a colander & drain for 15 minutes. Then rinse under cold water and gently

squeeze in paper towels to remove as much water as possible. Lightly whisk eggs in large

bowl,stir in potatoes, onion, flour, and baking powder. Season with salt and pepper. Coat large

non-stick pan with generous amount of PAM. Drop batter into pan by the tablespoon and flatten to

about 3" circle. Cook 2-4 minutes per side depending on your stove--will be lightly browned.



Special Notes



I usually top with fat-free sour cream or unsweetened applesauce and add the appropriate points.

Makes 16 latkes.

If you don't mind a 2 point latke, add 1 tbs. olive oil to the pan before frying the latkes. Of course,

they come out much crisper that way. Enjoy.
